Description
A Champagne whose name takes us on a journey into the region's past. Aubry de Humbert was the archbishop who laid the first stone of the Cathedral of Reims on May 6, 1211. This wine is made from the finest juice of the press, the coeur de cuvée. The champagne is composed of Pinot Noir, Meunier and Chardonnay from old vines in Villedommange, Pargny-lès-Reims and Jouy-lès-Reims. It is aged for at least five years on lees, which gives a particular expression of the evolution of the yeasts.
Le champagne est composé de Pinot noir, Meunier et Chardonnay issus de vieilles vignes de Villedommange, Pargny-lès-Reims et Jouy-lès-Reims. Le vieillissement est de cinq années au moins sur lies, ce qui donne une expression particulière de l’évolution des levures.
Tasting notes: Fine and tense nose with beautiful aromas of candied fruits, citrus zest and spices. Firm in the mouth, with an attractive seriousness and a slightly tannic structure that coats long and intense flavors. With restrained power and finesse, it is a perfectly designed wine. Very mineral.
